EATS: Queso Dip Recipe

This weekend is the big game! Super Bowl Sunday! As you all know by now I am a big fan of the game! I root for the Seattle Seahawks but when they don't make it I keep following the game and have my alternate favorite players and teams. As everyone who has ever attended a Super Bowl watch party knows, game day food is one of the best parts of the event.  My first Chopped Championship was Tailgate Fate. I was Executive Chef at Century Link Stadium and it was a fun episode where I went up against other stadium chefs and won. Go and access the episode for more fun and quirky game day inspired eats.

For us here on the blog, I am going to share my ultimate Super Bowl Sunday Queso dip recipe.  Serve it, bring it to your hosts, I promise, everyone is going to love this creamy indulgent queso dip. 

Queso Dip Recipe

  • 1 Pound of Fresh Grated Cheese (I used a mix of yellow cheddar
    and jack cheese)

  • 2 Tablespoons of Butter

  • 1 Garlic Clove, minced

  • 1 Can Evaporated Milk (12 fl ounces)

  • 1/2 Cup of Milk

  • 1/4 Teaspoon of Salt

  • 2 Tablespoons of Cornstarch

  • 1 Teaspoon of Lemon or Lime Juice 

    Queso Dip Instructions

  • In a large sauce pan melt the butter over medium high heat. Add garlic and sweat for one minute. Add evaporated milk and milk, and salt. Bring to a low boil. Reduce to a low simmer. Add cheese in thirds while blending with an immersion blender or stirring with a whisk. After the final addition of cheese, turn off the heat and stir making sure no cheese has burned on the bottom. Add lemon or lime juice. Serve with your favorite garnish and enjoy!

    ​This makes a large portion of queso, enough to feed a dozen or so hungry football fans.
