  • 6–8 shiitake mushrooms, sliced

  • 2 tablespoons white or yellow miso paste

  • 1/3 cup hot water

  • 4 cups vegetable broth

  • 1–2 teaspoons soy sauce, to taste

  • 1 tablespoon mirin

  • 1–2 teaspoons maple syrup

  • 1 package shirataki noodles, rinsed well under cold water and drained

  • 3-4 heads baby bok choy, stems and leaves separated

  • Chili crisp, for serving (optional)

Instructions

  1. Sauté the aromatics
    Heat the olive oil in a medium pot over medium heat. Add the sliced onion and a pinch of salt. Sauté for 5–7 minutes, stirring occasionally, until soft and translucent.

  2. Add the mushrooms
    Stir in the shiitake mushrooms and cook for 3–4 minutes, until softened and lightly glossy.

  3. Prepare the miso broth
    In a small bowl, whisk the miso paste with the hot water until smooth. Add the miso mixture to the pot, followed by the vegetable broth. Bring to a gentle boil.
