  • ¼ cup (60ml) melted coconut oil (or olive oil)

  • 1 tbsp apple cider vinegar (helps with rise)

Add-ins:

  • 4-5 ripe plums, pitted and sliced (sub with apples/pears if needed)

  • 2 tbsp chopped nuts (walnuts/pecans, optional)

For extra sweetness, add 1-2 tbsp coconut sugar (optional).

Vegan Plum Cake Instructions:

  1. Prep: Preheat oven to 350°F (175°C). Grease an 8-inch round or square cake pan or line with parchment paper.

  2. Mix dry ingredients: In a bowl, whisk together flour, almond flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
