Chickpeas Tso’s (Vegan)

Serves: 4

Time: ~35 minutes

Ingredients

For the Chickpeas

  • 2 (15 oz) cans chickpeas, drained, rinsed, and very well dried

  • 3 tablespoons cornstarch

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • ½ teaspoon garlic powder

  • ¼ cup neutral oil (for pan frying)

For the Sauce

  • 3 cloves garlic, minced

  • 1 tablespoon fresh ginger, grated

  • ¼ cup soy sauce (or tamari)

  • 3 tablespoons maple syrup

  • 2 tablespoons rice vinegar

  • 1 tablespoon hoisin sauce

  • 1 tablespoon tomato paste

  • 1–2 teaspoons chili paste (to taste)

  • ½ cup vegetable broth

  • 1 teaspoon cornstarch + 1 tablespoon water (slurry)

For Serving

  • Steamed jasmine rice

  • Steamed or sautéed broccoli

  • Sliced green onions

  • Sesame seeds

  • Optional: cilantro

Instructions

1. Crisp the Chickpeas

  • Pat chickpeas very dry (this is key for crispiness).

  • Toss with cornstarch, salt, pepper, and garlic powder until evenly coated.

  • Heat oil in a large skillet over medium-high heat.

  • Fry chickpeas for 8–10 minutes, turning occasionally, until golden and crispy.

  • Transfer to a plate.

2. Make the Sauce

  • In the same pan, reduce heat to medium.

  • Add a touch more oil if needed, then sauté garlic and ginger for 1 minute until fragrant.

  • Stir in soy sauce, maple syrup, rice vinegar, hoisin, tomato paste, chili paste, and vegetable broth.

  • Bring to a simmer.

3. Thicken

  • Stir in cornstarch slurry and cook 1–2 minutes until glossy and thickened.

4. Toss & Finish

  • Add crispy chickpeas back into the pan.

  • Toss until fully coated and sticky.

  • Let cook another 1–2 minutes so the sauce clings.

Serve

Spoon over jasmine rice with broccoli, then finish with green onions and sesame seeds or cilantro.

Chef Tips

  • For extra texture: finish chickpeas in the oven at 425°F for 10 minutes after frying.

  • Add dried red chilies for a more traditional General Tso’s heat.

  • A splash of orange juice or zest adds a subtle citrus lift that works beautifully.

  • If serving guests, plate it family-style with a glossy finish—this dish presents beautifully.
