Chipotle Roasted Cauliflower Ingredients
For the Roasted Cauliflower
1 large head cauliflower, cut into florets
2 tablespoons olive oil
1 teaspoon sea salt
½ teaspoon black pepper
1 teaspoon smoked paprika
1 teaspoon onion powder
1 teaspoon garlic powder
For the Vegan Chipotle Dressing
½ cup avocado oil
1–2 chipotle peppers in adobo sauce, finely chopped
1 tablespoon adobo sauce
1 tablespoon fresh lime juice
1 teaspoon maple syrup
1 small garlic clove, minced
1/4 cup chopped cilantro
2–3 tablespoons water, as needed to thin
Salt and pepper, to taste
For Garnish
Fresh parsley, chopped

Instructions
Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.
In a large bowl, toss the cauliflower florets with the olive oil, salt, black pepper, smoked paprika, onion powder, and garlic powder until evenly coated.
Spread the cauliflower in a single layer on the prepared baking sheet. Roast for 25–30 minutes, flipping halfway through, until the edges are caramelized and the cauliflower is tender.
