Creamy Balsamic Chickpea & Mushroom Stew

A hearty, cozy vegan stew made with chickpeas, mushrooms, zucchini, tomatoes, garlic, balsamic vinegar, and chili oil. Part of the stew is blended and stirred back in to create a naturally creamy texture—no dairy required. This easy one-pot chickpea stew is proof that simple ingredients can make an incredibly satisfying meal. Zucchini, shallots, and mushrooms are sautéed in olive oil until tender and fragrant, then seasoned with garlic, chili flakes, salt, and freshly cracked black pepper. Balsamic vinegar adds a touch of acidity and depth, while chili oil brings a little heat.

Chickpeas and tomatoes turn the mixture into a hearty stew, and the secret to its luscious texture is simple: blend about one-third of the stew and stir it back into the pot. The result is a thick, creamy tomato base while still keeping plenty of whole chickpeas and vegetables for texture.

Finish it with plenty of fresh Italian parsley and an extra drizzle of chili oil for a comforting, flavorful vegan meal.

Ingredients

Serves 4–6

  • 2 tablespoons extra-virgin olive oil

  • 1 medium zucchini, diced

  • 2 shallots, finely diced

  • 8 ounces mushrooms, sliced or diced

  • 4 cloves garlic, minced

  • ½ teaspoon red pepper flakes, or more to taste

  • 1 teaspoon salt, plus more to taste

  • ½ teaspoon freshly cracked black pepper

  • 2 tablespoons balsamic vinegar

  • 1–2 tablespoons chili oil, plus more for serving

  • 2 (15-ounce) cans chickpeas, drained and rinsed

  • 1 (28-ounce) can crushed or diced tomatoes

  • ½ cup water or vegetable broth, as needed

  • ¼ cup fresh Italian parsley, chopped, plus more for garnish

Instructions

1. Sauté the vegetables

Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium heat.

Add the diced zucchini, shallots, and mushrooms. Cook for 7–9 minutes, stirring occasionally, until the vegetables are tender and the mushrooms have released their moisture and begin to brown.

2. Add the aromatics and seasoning

Add the minced garlic, red pepper flakes, salt, and freshly cracked black pepper. Cook for 1–2 minutes, stirring frequently, until the garlic is fragrant.

3. Add the balsamic and chili oil

Pour in the balsamic vinegar and chili oil. Stir well, scraping up any flavorful bits from the bottom of the pot.

Cook for about 1 minute to allow the balsamic vinegar to mingle with the vegetables.

4. Add the chickpeas and tomatoes

Add the chickpeas and canned tomatoes. Stir to combine.

If the mixture seems especially thick, add ½ cup water or vegetable broth.

Bring the stew to a gentle simmer, then reduce the heat to medium-low. Cover partially and cook for 15–20 minutes, stirring occasionally, allowing the flavors to develop and the stew to thicken.

5. Make it creamy

This is the secret to the texture.

Transfer approximately one-third of the stew to a blender and carefully blend until mostly smooth. You can also use an immersion blender directly in the pot, blending just a portion of the mixture.

Return the blended portion to the pot and stir well.

The blended chickpeas and vegetables naturally thicken the tomato base while leaving plenty of whole chickpeas, mushrooms, and zucchini throughout the stew.

6. Finish and serve

Taste and adjust the seasoning with additional salt, black pepper, chili flakes, balsamic vinegar, or chili oil as desired.

Stir in the fresh Italian parsley just before serving.

Ladle into bowls and finish with fresh parsley, a drizzle of chili oil, and an optional drizzle of extra-virgin olive oil.

Serve warm with crusty bread, toasted sourdough, rice, quinoa, or your favorite grain.

Recipe Notes

Make it less spicy: Reduce or omit the red pepper flakes and use just a small amount of chili oil.

Make it extra spicy: Add additional chili flakes and finish each bowl with a generous drizzle of chili oil.

For a thicker stew: Blend closer to half of the mixture rather than one-third.

For a looser stew: Add additional vegetable broth or water until you reach your preferred consistency.

Make it ahead: This stew tastes even better the next day as the flavors have time to develop. Store refrigerated in an airtight container for up to 4 days.

Freezer-friendly: Allow the stew to cool completely before transferring to freezer-safe containers. Freeze for up to 3 months and thaw overnight in the refrigerator before reheating.
