  • 3–4 colorful heirloom tomatoes, sliced into wedges or rounds

  • 2 ripe peaches, thinly sliced

  • 1 large ripe avocado, sliced

  • Salt, to taste

  • Freshly ground black pepper, to taste

For the Balsamic Vinaigrette

  • 3 tablespoons extra-virgin olive oil

  • 1 tablespoon balsamic vinegar

  • 1 teaspoon Dijon mustard

  • 1 teaspoon maple syrup

  • Salt and freshly ground black pepper, to taste

Instructions

  1. Make the vinaigrette: In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, and maple syrup. Season with salt and pepper and whisk until emulsified.

  2. Prepare the tomatoes: Arrange the sliced heirloom tomatoes on a large serving platter. Season lightly with salt and freshly ground black pepper.

  3. Add the fruit and avocado: Arrange the peach and avocado slices among the tomatoes. Season everything lightly once more with salt and pepper.

  4. Dress the salad: Drizzle the balsamic vinaigrette evenly over the salad just before serving.

  5. Serve: Serve immediately while the tomatoes and peaches are at their freshest.
