  • 2–3 tablespoons ice-cold water

For the Cinnamon-Spice Almond Layer

  • ¼ cup almond flour

  • ¼ cup coconut sugar

  • 2 tablespoons brown sugar

  • 1 teaspoon cinnamon

  • ½ teaspoon Chinese five-spice powder

  • ¼ teaspoon ground ginger

  • ⅛ teaspoon nutmeg

  • Pinch cardamom

  • Pinch sea salt

  • 1 teaspoon orange zest

For the Apple Rose

  • 4–5 medium apples (Honeycrisp, Pink Lady, Fuji, or Gala)

  • Juice of ½ lemon

Maple Glaze

  • 1 tablespoon melted vegan butter

  • 1 tablespoon maple syrup

Instructions

Prepare the Crust

  1. In a large bowl, whisk together the flour, coconut sugar, and sea salt.

  2. Cut in the cold vegan butter until the mixture resembles coarse crumbs.

  3. Add ice water one tablespoon at a time until the dough just comes together.

  4. Form into a disk, wrap, and refrigerate for at least 30 minutes.

Make the Cinnamon-Spice Almond Layer

  1. In a small bowl, combine almond flour, coconut sugar, brown sugar, cinnamon, five-spice powder, ginger, nutmeg, cardamom, sea salt, and orange zest.
