Vegan Apple Crumble Tart

Vegan Apple Crumble Tart

There’s something especially comforting about a warm apple dessert fresh from the oven, and this Apple Crumble Tart brings together all the best parts of a classic apple crumble in a beautifully flaky tart. Tender cinnamon-spiced apples are tucked into crisp, golden puff pastry and finished with a buttery oat crumble that becomes deliciously crisp as it bakes.

This recipe is wonderfully simple, yet feels special enough to serve when you’re entertaining. The apple filling is gently cooked with maple syrup, cinnamon, pumpkin spice, and a pinch of salt, allowing the natural sweetness of the apples to shine while creating that cozy, autumn-inspired flavor we all love. A layer of vegan puff pastry makes the perfect base, while the oat crumble adds texture and just the right amount of sweetness.

I love that this tart comes together without the fuss of making pastry from scratch. Using store-bought vegan puff pastry keeps the preparation easy while still giving you those gorgeous flaky layers and golden edges. The result is a dessert that looks impressive but is wonderfully approachable.

Serve it slightly warm, on its own or with a scoop of your favorite vegan vanilla ice cream. Whether you’re making it for a weekend gathering, a holiday table, or simply because you have a few apples waiting to be used, this Apple Crumble Tart is the kind of dessert that makes any occasion feel a little more special.

Apple Crumble Tart Ingredients

For the apple filling

  • 4 apples, peeled and diced into small pieces

  • 2–3 tablespoons water

  • 1–2 tablespoons maple syrup, depending on the sweetness of the apples

  • 1 teaspoon cinnamon

  • 1 teaspoon pumpkin spice

  • Pinch of salt

For the tart

  • 1 sheet vegan puff pastry, thawed

  • 1 tablespoon plant milk, for brushing

For the vegan crumb topping

  • ½ cup all-purpose flour

  • ⅓ cup old-fashioned oats

  • ¼ cup brown sugar or coconut sugar

  • ¼ teaspoon cinnamon

  • Pinch of salt

  • 3 tablespoons vegan butter, softened or melted

Apple Crumble Tart Instructions

  1. Prepare the apples. Add the diced apples, water, maple syrup, cinnamon, pumpkin spice and salt to a saucepan over medium heat. Cook for about 8–12 minutes, stirring occasionally, until the apples are tender but still hold their shape. Remove from the heat and let cool slightly.

  2. Prepare the puff pastry. Preheat the oven to 400°F. Gently press the puff pastry into a lightly greased 9-inch pie or tart tin, trimming any excess pastry around the edges. Prick the bottom several times with a fork.

  3. Partially prebake. Line the pastry with parchment paper and add pie weights or dried beans. Bake for 10 minutes, then carefully remove the parchment and weights. Return the pastry to the oven for another 3–5 minutes, just until it begins to look lightly golden. Remove from the oven.

  4. Make the crumb topping. In a small bowl, combine the flour, oats, sugar, cinnamon and salt. Add the vegan butter and mix with your fingers or a fork until the mixture forms coarse crumbs.

  5. Assemble the tart. Spoon the slightly cooled apple mixture evenly into the prebaked pastry shell. Sprinkle the crumb topping generously over the apples.

  6. Bake. Brush the exposed pastry edges with a little plant milk. Return the tart to the oven and bake for 20–25 minutes, until the puff pastry is golden and flaky and the crumb topping is lightly browned.

  7. Cool and serve. Let the tart cool for at least 15–20 minutes before slicing so the apple filling can settle.

This Apple Crumble Tart is the perfect reminder that a delicious homemade dessert doesn’t have to be complicated. With tender, cinnamon-spiced apples, flaky vegan puff pastry, and a golden oat crumble topping, every bite brings together comforting flavors and irresistible textures.

What makes this tart especially lovely is how easy it is to prepare. The apples can be cooked ahead of time, and using store-bought vegan puff pastry means you can skip the work of making a pastry crust from scratch. A simple crumble topping adds the finishing touch, transforming a handful of everyday ingredients into a dessert that feels warm, generous, and special.

For the best results, give the tart a little time to cool before slicing. This allows the apple filling to settle while the pastry and crumble remain wonderfully crisp. Serve it slightly warm with vegan vanilla ice cream, a dollop of whipped cream, or simply enjoy a slice on its own with a cup of coffee or tea.

Whether you’re baking for a holiday gathering, a cozy weekend treat, or simply looking for a delicious way to use up a few apples, this tart is sure to become a favorite. It’s easy, comforting, completely vegan, and full of the cozy flavors of the season.
