Vegan Berry Crumble

Ingredients

Berry Filling

  • 4 cups mixed berries (strawberries, blueberries, raspberries, blackberries)

  • 1/3 cup maple syrup

  • 1 tablespoon lemon juice

  • 1 teaspoon vanilla extract

  • 2 tablespoons cornstarch (or arrowroot powder)

  • Pinch of sea salt

Crumble Topping

  • 1 cup rolled oats

  • 3/4 cup almond flour

  • 1/2 cup brown sugar or coconut sugar

  • 1/2 teaspoon cinnamon

  • 1/4 teaspoon salt

  • 1/2 cup vegan butter, cold and cubed

  • Optional: 1/4 cup chopped nuts (almonds or pecans)

Instructions

  1. Preheat oven to 375°F and lightly grease a baking dish.

  2. Make the filling:
    In a large bowl, gently toss the berries with maple syrup, lemon juice, vanilla, cornstarch, and salt. Transfer to your baking dish and spread evenly.

  3. Make the crumble topping:
    In another bowl, combine oats, flour, sugar, cinnamon, and salt. Add the cold vegan butter and use your fingers or a pastry cutter to mix until crumbly. Stir in nuts if using.

  4. Assemble:
    Evenly sprinkle the crumble topping over the berries.

  5. Bake:
    Bake for 30–35 minutes, or until the topping is golden brown and the berries are bubbling.

  6. Cool slightly before serving to let the filling set.
