We set out for one of those quietly romantic road trips for the spring break that started with a long stretch through upstate New York in early spring. The sky hanging low and silvery, the kind of soft overcast that makes the landscape feel like a watercolor in motion. It’s the kind of journey where time stretches, conversations deepen, and hunger—both literal and metaphorical—creeps in somewhere between exits.
Being vegan, we did carefully plan where we would stop for specialty coffees and vegan meals and around 2 pm we were definitely ready for our planned lunch stop in Syracuse. We pulled into a modest but lively storefront café with a bold promise: a 100% vegan menu. No compromises, no substitutions—just intentional, plant-based food crafted with care. A place called Strong Hearts.
There was something inviting about it—the kind of place that feels lived-in, beloved by locals, and rooted in purpose. Inside, the atmosphere was warm and unpretentious. A soft hum of conversation, the clatter of dishes, the faint scent of spices and something toasted—it felt like we had stumbled into a hidden pocket of nourishment.
We ordered instinctively, guided by equal parts hunger and curiosity. What arrived at our table wasn’t just food—it was a reminder of how deeply satisfying vegan cuisine can be when it’s done right.

In contrast, the Protein Chocolate Peanut Butter Smoothie leaned into indulgence—but without guilt. Rich, creamy, and deeply satisfying, it tasted like dessert while functioning as fuel. The chocolate and peanut butter combination was classic, but here it was elevated—smooth, balanced, and not overly sweet.
It had weight to it, substance. The kind of smoothie that doesn’t just accompany a meal but completes it. After miles of highway and a long stretch of travel ahead, it felt grounding—like something that would carry us forward.
The Thai Tofu Salad: Bright, Bold, and Balanced
As the Thai Tofu Salad came to our table, it immediately set the tone. Vibrant and abundant, it looked like a celebration of color—deep reds, fresh greens, bright pops of cilantro and cabbage layered beneath perfectly prepared tofu.
The maple chipotle tofu was the star. Caramelized just enough to develop a subtle crisp on the outside, it balanced sweetness with a gentle smokiness that lingered on the palate. It wasn’t overpowering—it was thoughtful. The kind of flavor that invites you back for another bite without overwhelming the rest of the dish.
Paired with thai-spiced cashews, the salad offered a satisfying crunch and a whisper of warmth from the spices. The cucumbers added a refreshing coolness, while red cabbage brought both texture and a slight peppery bite. Shelled edamame gave it substance, making the salad feel hearty and complete—not an afterthought or a side, but a main event.
The thai vinaigrette tied everything together. Bright with citrus and layered with subtle complexity, it coated each ingredient without drowning it. A squeeze of lime at the end elevated everything, adding a final note of acidity that made the entire dish sing.

But what made this salad memorable was the layering.
Roasted corn salsa added a smoky sweetness, while black beans brought depth and heartiness. Pickled red onions and jalapeños cut through the richness with sharp, tangy notes, offering contrast and balance. Tortilla strips added crunch, echoing the fried tenders while introducing a subtle corn flavor that tied everything together.
The chopped romaine served as a crisp, refreshing base, grounding the dish and keeping it from feeling too heavy. And then there was the jalapeño ranch dressing—creamy, slightly spicy, and deeply satisfying. It coated each bite with a richness that felt indulgent without being overwhelming.
A final squeeze of lime brightened the entire dish, cutting through the creaminess and tying all the elements together.
This was comfort food reimagined. Familiar flavors, elevated through thoughtful execution and entirely plant-based ingredients. It was the kind of dish that doesn’t just satisfy hunger—it satisfies cravings.
