Vegan Quinoa Salad with Sweet Potato, Black Beans & Corn
Ingredients
For the Salad
1 cup cooked quinoa, (cooked according to package directions) and cooled
1 medium sweet potato, peeled and cut into small cubes
1 cup cooked black beans, drained and rinsed
2 ears fresh corn, kernels removed from the cob
1 cucumber, diced
1/2 red bell pepper, diced
1/2 orange bell pepper, diced
1 large heirloom tomato, diced
1/4 serrano pepper, finely diced
2–3 green onions, chopped
1 avocado, diced
1/4 cup fresh cilantro, chopped
Olive oil
1/2 tsp paprika
1/2 tsp garlic powder
Salt and freshly ground black pepper, to taste
For the Cilantro Vinaigrette
1/4 cup fresh cilantro
3 tbsp extra-virgin olive oil
2 tbsp fresh lime juice
1 tbsp apple cider vinegar
1 tbsp maple syrup
1 small garlic clove
1/2 tsp ground cumin
Salt and pepper, to taste
Instructions
Roast the sweet potato. Preheat oven to 425°F. Toss the sweet potato cubes with a drizzle of olive oil, salt, and pepper. Spread on a baking sheet and roast for 20–25 minutes, turning once, until tender and lightly caramelized. Allow to cool.
Toast the corn. Heat a small amount of olive oil in a skillet over medium-high heat. Add the fresh corn and season with paprika, garlic powder, salt, and pepper. Cook for 4–6 minutes, stirring occasionally, until the corn is lightly toasted and beginning to brown. Let cool.
Make the vinaigrette. Add the cilantro, olive oil, lime juice, apple cider vinegar, maple syrup, garlic, cumin, salt, and pepper to a blender. Blend until mostly smooth.
Assemble the salad. In a large bowl, combine the cooled quinoa, sweet potato, black beans, toasted corn, cucumber, peppers, tomato, serrano, and green onions. Gently toss.
Add the fresh ingredients. Fold in the avocado and cilantro. Drizzle with the cilantro vinaigrette and gently toss again.
Serve. Taste and adjust the salt, pepper, or lime juice as needed. Serve immediately or refrigerate until ready to eat.
