Watermelon with Balsamic Basil Dressing

Watermelon with Balsamic Basil Dressing

There’s something undeniably special about the simplicity of watermelon at its peak—icy cold, impossibly juicy, and naturally sweet. But with just a few thoughtful additions, it transforms from a classic summer snack into something elevated and unforgettable. This watermelon with balsamic basil dressing is a perfect example of how a handful of ingredients can create a beautifully balanced dish that feels both effortless and refined.

The richness of balsamic vinegar brings a deep, slightly sweet tang that enhances the natural sugars of the watermelon, while a touch of maple syrup rounds everything out with subtle warmth. Fresh lemon juice adds brightness, lifting the flavors and keeping the dish light and refreshing. And then there’s basil—fragrant, slightly peppery, and quintessentially summery—woven into the dressing and scattered over the top for a fresh herbal finish.

A final sprinkle of flaky sea salt and freshly cracked black pepper ties everything together, creating that irresistible sweet-salty contrast in every bite. Whether you’re serving this as a starter, side dish, or part of a larger spread, it’s a recipe that celebrates the beauty of seasonal ingredients and the joy of keeping things simple.

Watermelon with Balsamic Basil Dressing

Ingredients:

  • 4 cups watermelon, cut into cubes or wedges

  • 1/4 cup balsamic vinegar

  • 2 tablespoons extra virgin olive oil

  • 1–2 teaspoons maple syrup (or agave), to taste

  • 1/2 teaspoon Dijon mustard

  • 1 teaspoon fresh lemon juice

  • 4–5 fresh basil leaves, finely chopped (plus more for topping)

  • Flaky sea salt

  • Freshly cracked black pepper

Instructions:

  1. In a small bowl or jar, whisk together the balsamic vinegar, maple syrup, Dijon mustard, and fresh lemon juice until smooth.

  2. Slowly drizzle in the olive oil while whisking to emulsify the dressing.

  3. Stir in the finely chopped basil leaves.

  4. Taste and adjust—add a touch more maple syrup for sweetness or lemon juice for brightness.

  5. Arrange the watermelon on a serving platter.

  6. Drizzle lightly with the balsamic basil dressing.

  7. Top with additional fresh basil leaves, a pinch of flaky sea salt, and freshly cracked black pepper.

Serve immediately while the watermelon is chilled and crisp. It’s refreshing, vibrant, and ideal for summer gatherings or a light starter.
