Ingredients

  • 1 large roasted beet, peeled and roughly chopped (about 1 cup)

  • 1 (15-ounce) can chickpeas, drained and rinsed

  • ¼ cup tahini

  • 2 tablespoons fresh lemon juice

  • 2 tablespoons extra virgin olive oil

  • 2 cloves garlic

  • ½ teaspoon ground cumin

  • ½ teaspoon sea salt, or to taste

  • ¼ teaspoon freshly cracked black pepper

  • 2–4 tablespoons ice water

For Topping

  • 1–2 tablespoons spicy chili crisp

  • 1 tablespoon toasted sesame seeds

  • 1 teaspoon fresh thyme leaves

  • Extra virgin olive oil (optional)

Instructions

  1. Roast the beet by wrapping it loosely in foil and baking at 400°F (200°C) for 45–60 minutes, or until fork tender. Let cool before peeling.

  2. Add the roasted beet, chickpeas, tahini, lemon juice, olive oil, garlic, cumin, salt, and pepper to a food processor.

  3. Blend for several minutes until smooth, scraping down the sides as needed.

  4. Add the ice water one tablespoon at a time while blending until the hummus becomes silky, light, and creamy.

  5. Taste and adjust the seasoning with additional salt or lemon juice, if desired.

  6. Spoon the hummus into a shallow serving bowl and create swirls with the back of a spoon.

  7. Drizzle with the spicy chili crisp, sprinkle with toasted sesame seeds and fresh thyme leaves, and finish with a light drizzle of olive oil if desired.

Serve with warm pita, seeded crackers, crisp cucumbers, carrots, radishes, or spread onto sandwiches and grain bowls.
