Vegan French Onion Dip
Serves: 6–8 | Prep Time: 15 minutes (plus cashew soaking time) | Cook Time: 25 minutes
Ingredients
For the caramelized onions:
1 large yellow onion, thinly sliced
1 tablespoon olive oil
½ teaspoon sea salt
1 teaspoon balsamic vinegar
1/8 teaspoon baking powder
1/2 cup water
For the cashew base:
1 cup raw cashews, soaked for 4 hours or quick-soaked in hot water for 30 minutes
⅓ cup unsweetened plant milk
4 tablespoons lemon juice
1 tablespoon tamari
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon apple cider vinegar
½ teaspoon smoked paprika
½ teaspoon sea salt
¼ teaspoon black pepper
To finish:
1 tablespoon fresh chives, finely chopped
Additional salt and pepper to taste
Instructions
1. Caramelize the onions
Heat the olive oil in a large skillet over medium-low heat. Add the sliced onions and salt. After they get. a little color add baking soda and water. Cook slowly, stirring occasionally, for 20–25 minutes until deeply golden and sweet.
Stir in the balsamic vinegar during the final 2 minutes of cooking. Remove from heat and allow to cool completely.
2. Make the cashew cream
Drain and rinse the soaked cashews.
Add the cashews, plant milk, lemon juice, tamari, onion powder, garlic powder, apple cider vinegar, paprika, salt, and pepper to a high-speed blender. Blend until completely smooth and creamy. Add an extra tablespoon or two of plant milk if needed.
3. Assemble the dip
Transfer the cashew cream to a bowl. Fold in the cooled caramelized onions, and chives.
Taste and adjust seasoning with additional salt, pepper, or lemon juice.
4. Chill
Refrigerate for at least 30 minutes before serving. This allows the flavors to meld and the dip to thicken.
