Apple Pie Oat Pancakes (Vegan)
Our friend shared the most goregeous apple haul with us and we’re swimming in fresh apples. Waking up to a rainy autumn weekend morning, we decided that a warm stack of oat pancakes infused with warming spices—cinnamon, ginger, and nutmed—and topped with tender diced apples would be the perfect indulgent start to the day.
If you’ve been here for awhile, you know that weekend pancakes are our family tradition, and these Vegan Apple Pie Oat pancakes are the perfect seasonal blend of hearty, wholesome, and delicious. Made with simple, plant-based ingredients, they’re naturally sweetened applesauce and maple syrup and spiced with cinnamon for that perfect warming flavor. The base of blended oats adds a wonderful texture and makes these pancakes extra satisfying and gives a boost of both soluble and insoluble fiber, to support healthy digestion, regulate blood sugar levels, and promote satiety. The soluble fiber, can also help lower cholesterol levels. While these oat pancakes feel like an indulgent treat, you’re starting your day with a meal that promotes long-lasting energy and gut health.
Oats aren’t the only wellness star of this plant-based breakfast recipe. The apple pie topping is a powerhouse of vitamins, minerals, and antioxidants. While the apple pie topping makes these vegan pancakes feel like a dessert, in fact, they enhance it to a nutrient-dense vegan breakfast. Apples are rich in dietary fiber, particularly pectin, which supports gut health by feeding beneficial gut bacteria and improving digestion. The skin, if left on, adds extra antioxidants and phytonutrients like quercetin, known for its anti-inflammatory properties. The spices in this apple pie topping—ginger, nutmeg, and cinnamon—while enhancing the flavor they also contain potent antioxidants and compounds that work to support digestion, reduce inflammation, and even boost metabolism. Ginger, for instance, is known for soothing the digestive tract, while nutmeg has antibacterial properties and may aid sleep quality.

Apple Pie Oat Pancakes Instructions
Prepare the pancake batter
Blend the oats: Add the rolled oats to a blender or food processor and pulse until they reach a flour-like consistency. It doesn’t need to be super fine—some texture is fine for pancakes.
Mix the batter: In a mixing bowl add the plant-based milk, maple syrup, apple cider vinegar, apple sauce, and vanilla extract. Whisk to combine.
Combine dry and wet ingredients: Add the blended oats, flour, baking powder, baking soda, cinnamon, and salt to the wet ingredients. Mix until well combined. Let the batter sit for 10-15 minutes to thicken.
Cook the pancakes: Heat a cast iron skillet over medium heat. Lightly grease with coconut oil or avocado oil. Pour about 1/4 cup of batter for each pancake onto the skillet. Cook for 2–3 minutes on one side, or until bubbles form on the surface into the center. Flip and cook for another 1–2 minutes, until golden brown.
2. Cook the Apple Pie Topping:
In a separate small saucepan, combine the diced apples, cinnamon, ginger, nutmeg, salt, and apple cider.
Cook over medium heat, stirring occasionally, for 5-7 minutes, or until the apples are tender but still hold their shape. If the mixture gets too dry, add more apple cider.
3. Serve
Stack the pancakes and top with the apple pie filling. Pour maple syrup over the top and enjoy!
