Miso-Glazed Eggplant Bites Ingredients
1 large eggplant
1 tablespoon olive oil
2 tablespoons white miso
1 tablespoon maple syrup
1 tablespoon sesame oil
1 tablespoon rice vinegar
1 teaspoon soy sauce or tamari
1 clove garlic, finely minced
1 tablespoon water
1 tablespoon sesame seeds
2 scallions, thinly sliced
Miso-Glazed Eggplant Bites Instructions
Preheat the oven to 425°F. Line a baking sheet with parchment paper.
Peel and cut the eggplant into approximately 1-inch cubes. Place them in a large bowl and toss with the olive oil.
Arrange the eggplant pieces in a single layer on the prepared baking sheet. Roast for 20–25 minutes, turning once halfway through, until tender and beginning to brown around the edges.
While the eggplant is roasting, prepare the glaze. In a small bowl, whisk together the white miso, maple syrup, sesame oil, rice vinegar, soy sauce, garlic, and water until smooth.
Remove the eggplant from the oven and brush or toss generously with the miso glaze.
Return the eggplant to the oven and roast for another 5–7 minutes, until the glaze is caramelized and glossy. Keep a close eye on it so the maple syrup doesn't burn.
