Baked Apples Ingredients

  • 4 medium apples, such as Honeycrisp, Gala, or Pink Lady

  • 1/4 cup chopped walnuts or pecans

  • 2 tablespoons raisins

  • 1 tablespoon maple syrup

  • 1 teaspoon cinnamon

  • 1/4 teaspoon pumpkin spice

  • 1/2 teaspoon vanilla extract

  • 1 tablespoon vegan butter, divided

  • 1/2 cup water or apple cider

Baked Apples Instructions

  1. Preheat the oven to 375°F.

  2. Wash the apples and carefully remove the cores, leaving the bottoms intact so the filling stays inside. If necessary, use a small spoon to create a slightly larger cavity in the center. Or, slice the apples in half and core.

  3. In a small bowl, combine the chopped walnuts, raisins, maple syrup, cinnamon, pumpkin spice, and vanilla extract.

  4. Arrange the apples upright in a small baking dish.

  5. Divide the filling evenly among the apples and place a small piece of vegan butter on top of each one.

  6. Pour the water or apple cider into the bottom of the baking dish.

  7. Bake for 35–45 minutes, depending on the size of the apples, until they are tender but still hold their shape.

  8. Remove from the oven and let them cool for 5 minutes before serving.

To Serve

Place one warm baked apple on each dessert plate. Spoon some of the warm juices from the baking dish over the top and serve with a scoop of vegan vanilla ice cream or a dollop of coconut whipped cream. Finish with a light sprinkle of cinnamon.
