This vegan fall brunch brings together a little bit of everything I love about the season, without making the menu overly complicated. For something savory, we’re making vegan JUST Egg savory muffins that are easy to prepare ahead of time and perfect for serving warm or at room temperature. For something sweet, a pumpkin French toast casserole brings all those cozy fall flavors together in one dish—and it’s especially convenient when you’re hosting since most of the work can be done ahead of time.

To round out the table, we’re adding apple cider mimosas for a festive fall cocktail and a homemade pumpkin spice coffee creamer for coffee lovers.

  • 2 cups JUST Egg

  • 1/2 cup unsweetened plant milk

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon dried thyme

  • 1/4 teaspoon smoked paprika

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1/2 cup finely diced red bell pepper

  • 1/2 cup finely chopped spinach

  • 1/3 cup finely diced red onion

  • 1/3 cup vegan shredded cheese

  • 2 tablespoons chopped fresh parsley or chives

  • Cooking spray or olive oil for the muffin tin

  1. Preheat the oven to 375°F.

  2. Lightly grease a 12-cup muffin tin.

Tip: You can substitute mushrooms, broccoli, asparagus, or vegan sausage for the vegetables. These can also be prepared the night before and reheated in the morning.

Pumpkin French Toast Casserole

This is the centerpiece of the sweet side of the brunch. Pumpkin puree, cinnamon, vanilla, and maple syrup turn day-old bread into a warm, custardy vegan French toast casserole.

Pumpkin French Toast Casserole Ingredients

For the casserole

  • 1/2 loaf day-old French bread or sourdough, cut into 1-inch cubes

  • 1 and 1/2 cup pumpkin puree

  • 2 cups unsweetened oat milk

  • 1 cup vegan yogurt

  • 1/2 cup maple syrup

  • 2 teaspoons vanilla extract

  • 2 teaspoons pumpkin pie spice

  • 1 and 1/2 teaspoon cinnamon

  • 1/2 teaspoon salt

For the topping

  • 1/3 cup chopped pecans or walnuts

  • 1 tablespoon maple syrup

  • 1/2 teaspoon cinnamon

  • Pinch of salt

Pumpkin French Toast Casserole Instructions

  1. Preheat the oven to 350°F.

  2. Lightly grease a 9x13-inch baking dish.

  3. Add the cubed bread to the dish.

  4. In a large bowl, whisk together pumpkin puree, oat milk, vegan yogurt, maple syrup, vanilla, pumpkin pie spice, cinnamon, and salt.

  5. Pour the pumpkin mixture evenly over the bread. Gently toss or press the bread down so it absorbs the mixture.

  6. Let sit for at least 20 minutes, or cover and refrigerate overnight.

  7. Combine the pecans/walnuts, maple syrup, cinnamon, and salt. Sprinkle over the casserole.

  8. Bake uncovered for 40–50 minutes, until the center is set and the top is lightly golden.

  9. Let rest for 10 minutes before serving.

Serve with fresh berries, a dusting of cinnamon, or a small drizzle of maple syrup.

Apple Cider Mimosas

Apple cider makes a perfect fall alternative to traditional orange juice in a mimosa.

Apple Cider Mimosas Ingredients

  • 2 ounces chilled apple cider

  • 4 ounces chilled vegan-friendly sparkling wine or Champagne

  • Apple slices, for garnish

  • Cinnamon sugar, optional

Apple Cider Mimosas Instructions

  1. If desired, rub an apple slice around the rim of a champagne flute and dip the rim into cinnamon sugar.

  2. Pour the apple cider into the glass.

  3. Slowly top with chilled sparkling wine.

  4. Garnish with a thin apple slice.

For a cocktail with a little more fall flavor: Add 1/2 ounce bourbon to each glass before topping with sparkling wine.

Pumpkin Spice Coffee Creamer

This homemade pumpkin spice creamer is easy to make and gives your brunch coffee a festive fall upgrade without relying on store-bought creamer.

Ingredients

  • 1 cup unsweetened oat milk

  • 1/2 cup unsweetened coconut milk or another plant milk

  • 2 tablespoons pumpkin puree

  • 1–2 tablespoons maple syrup, to taste

  • 1 teaspoon vanilla extract

  • 1/2 teaspoon pumpkin pie spice

  • 1/4 teaspoon cinnamon

  • Pinch of salt

Instructions

  1. Add all ingredients to a small saucepan.

  2. Warm over medium-low heat, whisking frequently. Do not boil.

  3. Once hot and well combined, remove from the heat.

  4. Let cool slightly before adding to coffee.

  5. Store leftovers in a sealed container in the refrigerator for up to 5 days. Shake well before using.

For a richer creamer, replace the coconut milk with vegan half-and-half or use a barista-style oat milk.
