The Vegan Breakfast Bowl I’m Having on Repeat

There are some breakfasts that feel like a recipe, and then there are breakfasts that become a ritual. This vegan breakfast bowl is definitely the latter. I’ve been making some version of it on repeat lately because it checks all the boxes I want from a morning meal: it’s easy, colorful, naturally sweet, filling, and packed with whole-food ingredients.

The best part is that there really isn’t much cooking involved. I make a quick berry compote, let it cool, and keep it in the refrigerator so breakfast comes together in just a few minutes. From there, it’s simply a matter of layering creamy plant-based yogurt with the berry mixture, hemp hearts, banana, whatever fresh fruit I have on hand, and a handful of walnuts.

It feels a little luxurious for something that takes almost no effort.

Why I Love This Breakfast Bowl

My favorite thing about this bowl is the combination of textures and flavors. The unsweetened plant-based yogurt is creamy and slightly tangy, while the berry compote adds a burst of bright, jammy fruit. A little lemon keeps the berries tasting fresh, and vanilla and maple syrup round everything out without making the compote overly sweet.

Then come the toppings: hemp hearts for a nutty, delicate crunch, banana for natural sweetness and creaminess, walnuts for even more texture, and fresh seasonal fruit.

Lately, I’ve been using half a plum and half a peach, diced into small pieces. Depending on what’s in the kitchen, I might swap those for fresh berries, kiwi, or another favorite seasonal fruit. That flexibility is part of what makes this such a good everyday breakfast.

It’s less of a strict recipe and more of a breakfast formula you can make your own.

A Breakfast Built Around Whole Foods

Nutritionally, this bowl brings together several ingredients that can make a satisfying start to the day.

Plant-based yogurt provides a creamy base, and choosing an unsweetened variety lets you control how much sweetness goes into the bowl. Depending on the yogurt you use, it may also contribute plant-based protein and probiotics.

Berries are one of my favorite breakfast ingredients because they add so much flavor without needing much added sweetness. Blueberries, raspberries, and blackberries also provide fiber and antioxidant compounds, making the berry compote both delicious and nutrient-rich.

Hemp hearts are another reason I love this bowl. Just two tablespoons add a satisfying nutty flavor along with plant-based protein and healthy fats. They’re tiny, but they make the bowl feel substantially more substantial.

Banana brings natural sweetness, potassium, carbohydrates, and additional fiber. It also makes the bowl feel more satisfying without needing granola or a heavily sweetened topping.

And then there are the walnuts, which add crunch and a source of plant-based omega-3 fatty acids, along with healthy fats.

Finally, I like adding whatever fresh fruit looks best. Right now, that means juicy peach and plum, but berries and kiwi are equally delicious.

The Berry Compote

The berry compote is the only part that requires cooking, and even that takes just a few minutes.

I combine blueberries, raspberries, and blackberries in a small saucepan with a pinch of salt, a squeeze of fresh lemon juice, a little maple syrup, and vanilla extract. As the berries warm, they soften and release their juices, creating a loose, naturally vibrant compote.

I don’t cook it until it becomes a thick jam. I like keeping some of the berries intact and letting the mixture remain spoonable. Once it cools, I swirl it into the yogurt.

You can make a batch ahead of time and refrigerate it, which makes weekday breakfasts even easier.

My Vegan Breakfast Bowl Recipe

Serves: 1
Prep time: 5 minutes, plus cooling time for the compote

Ingredients

For the berry compote:

  • Blueberries

  • Raspberries

  • Blackberries

  • A pinch of salt

  • A squeeze of fresh lemon juice

  • Maple syrup, to taste

  • A splash of vanilla extract

For the bowl:

  • ¾ cup unsweetened plant-based yogurt

  • Berry compote, to taste

  • 2 tablespoons hemp hearts

  • 1 banana, sliced

  • ½ plum, diced

  • ½ peach, diced

  • About 1 tablespoon chopped walnuts

Instructions

  1. Add blueberries, raspberries, and blackberries to a small saucepan. Add a pinch of salt, a squeeze of lemon juice, maple syrup to taste, and a splash of vanilla extract.

  2. Cook over medium-low heat for several minutes, stirring occasionally, until the berries soften and release their juices. Remove from the heat and let cool completely.

  3. Spoon ¾ cup of unsweetened plant-based yogurt into a bowl.

  4. Spoon the cooled berry compote over the yogurt and gently swirl it through.

  5. Sprinkle with 2 tablespoons of hemp hearts.

  6. Slice the banana and arrange it over the yogurt.

  7. Add the diced plum and peach, or substitute whatever fresh fruit you have on hand.

  8. Finish with about 1 tablespoon of chopped walnuts.

  9. Serve immediately and enjoy.

Make It Your Own

This is one of those breakfasts where you really don’t need to follow the recipe perfectly. The basic combination is what matters: creamy yogurt + fruit + seeds + nuts + fresh produce.

If you want more protein, choose a higher-protein unsweetened plant-based yogurt or add another spoonful of hemp hearts. If you prefer a sweeter breakfast, add a little more maple syrup to the compote. For more crunch, add additional walnuts or another favorite nut or seed.

You can also change the fruit with the seasons. Strawberries, cherries, mango, kiwi, apples, pears, or whatever looks particularly good at the market can all find a place here.

And while granola would certainly be delicious, I actually like this version without it. The hemp hearts and walnuts provide enough texture, while the fruit keeps everything fresh.

A Simple Wellness Ritual

I’ve come to appreciate breakfasts like this because wellness doesn’t have to mean complicated meals, restrictive rules, or spending an hour in the kitchen every morning. Sometimes it’s simply putting together a bowl of foods that makes you feel good and that you genuinely enjoy eating.

This breakfast gives me a combination of fruit, fiber, healthy fats, and plant-based ingredients in one colorful bowl. It’s satisfying without feeling heavy, and it’s easy enough to become part of a regular routine.

Most importantly, it tastes good.

And that’s probably why I keep making it.
