Kale & Crispy Balsamic Tofu Salad
If you’re looking for an easy vegan meal that’s fresh, filling, and packed with flavor, this Kale & Balsamic Tofu Salad deserves a spot in your weekly rotation. It combines hearty chopped kale with juicy tomatoes, crisp cucumber, creamy avocado, fresh parsley, and golden tofu coated in a glossy balsamic glaze. The result is a colorful, satisfying salad that feels light enough for summer but substantial enough to serve as lunch or dinner.
One of the best things about this vegan kale salad is the contrast of textures and flavors. The kale is tossed in a simple homemade balsamic vinaigrette, while the tofu is sautéed with olive oil and red chili flakes before being finished with balsamic vinegar for a tangy, slightly sweet glaze. The creamy avocado balances the acidity, while the crisp vegetables keep every bite fresh.
This is also an excellent high-protein vegan salad for busy weeknights. Firm tofu adds plant-based protein without making the dish heavy, and the entire recipe comes together quickly with ingredients you may already have in your kitchen. It’s an easy way to turn a basic salad into a complete plant-based meal.
Whether you’re searching for easy vegan recipes, healthy lunch ideas, a simple tofu recipe, or new ways to enjoy kale, this salad checks all the boxes. It’s also easy to customize. Add your favorite seasonal vegetables, swap the parsley for another fresh herb, or increase the red pepper flakes if you like a little extra heat.
The combination of balsamic-glazed tofu, creamy avocado, crisp vegetables, and tender kale makes this salad anything but boring. Serve it as a quick weekday lunch, a light dinner, or a beautiful side dish for a summer gathering.
If you’re trying to eat more plant-based meals without sacrificing flavor or satisfaction, save this easy vegan kale and tofu salad for your next meal. It’s simple, colorful, nourishing, and proof that a salad can absolutely be the main event.

Salt and freshly ground black pepper, to taste
1–2 tomatoes, diced
1 cucumber, diced
1 avocado, diced
¼ cup fresh parsley, chopped
Homemade balsamic vinaigrette, to taste
For the tofu

Salt and pepper, to taste
2 tablespoons balsamic vinegar
1 teaspoon maple syrup, optional, for a slightly sweeter glaze
Kale & Crispy Balsamic Tofu Salad Instructions
Prepare the kale: Add the finely chopped kale to a large bowl. Season with salt and pepper and massage the kale with your hands for 1–2 minutes until it softens slightly.
Dress the salad: Toss the kale with your homemade balsamic vinaigrette. Add the diced tomatoes, cucumber, avocado, and chopped parsley. Gently toss to combine.
Cook the tofu: Heat the olive oil in a large skillet over medium-high heat. Add the tofu cubes, season with salt and pepper, and sprinkle with the red chili flakes. Sauté for 6–8 minutes, turning occasionally, until golden and lightly crisp on the edges.
Make the balsamic glaze: Reduce the heat to medium-low and add the balsamic vinegar to the skillet. If using, add the maple syrup. Toss the tofu continuously as the balsamic reduces and coats the cubes in a glossy glaze, about 1–2 minutes.
Serve: Divide the kale salad among bowls or plates and top with the warm balsamic-glazed chili tofu. Serve immediately.
Tip: For extra flavor, let the dressed kale sit for 5–10 minutes before adding the toppings. The kale becomes more tender and absorbs the vinaigrette beautifully.
