Perfect Summer Sandwich
Ingredients
2 slices Ezekiel bread
1 1/2 teaspoon vegan mayonnaise
1 1/2 teaspoon hummus (hummus recipe here)
1 cup spring greens
1 slice vegan cheese
1 medium tomato, sliced
Sea salt and freshly cracked black pepper
½ cucumber, thinly sliced
¼ avocado
¼ cup alfalfa sprouts
1 tablespoon pickled red onions (pickled red onion recipe here)
2-4 lemon wedges
Instructions
Place Ezekial bread on plate
Spread the vegan mayonnaise on one slice of bread and the hummus on the other.
In a small bowl, lightly mash the avocado with lemon juice, and a pinch of salt and pepper.
Layer the spring greens over the hummus-covered slice of bread.
Add the vegan cheese slice.
